廚房空調系統不宜采用風機盤管系統，因為廚房內油煙、水蒸氣較多，長期循環(huán)室內污濁空氣勢必造成油煙附著在盤管表面，使其傳熱系數大大降低，冷卻效果越來越差，以致不能使用。

廚房送風包括兩部分：室外新風和空調風。
The kitchen air supply consists of two parts: outdoor fresh air and air conditioning.
(1)室外新風。室外新風通過軸流或離心風機經風管送入靠近爐灶處．主要起到補風作用。新風位置要適當，送風切不能在廚師頭頂或頸后直吹，否則會造成不舒適，嚴重的會引起廚師職業(yè)病。送風口距廚師約1．5m較合適。

(3)送風量的確定。為防止廚房氣味串人餐廳，廚房應保持負壓。一般情況下，廚房負壓值不得大于5Pa。送風量(新風+空調風)應按排風量的85%～95%考慮。
